Kofta, Kefte, Kafta.... Meatballs









There's no fancy commentary here, just a great recipe for kefte - a Middle Eastern/Turkish version of meatballs. They're often shaped oblong, but I just make balls purely for simplicity's sake.


Kefte Meat Mix

  • 1lb lamb and beef mix

  • 2Tcumin

  • 2T packed minced fennel fronds

  • 1Tchili flake

  • 1teaspoon thyme

  • 1Tgarlic

  • 2t mincced parsley

  • 1/4cup bread crumbs

  • 1 egg


Sauce

  • strained greek yogurt

  • tahini

  • lemon

  • minced parsley

  • minced garlic

  • olive oil


Directions

  1. Heat oven to 375

  2. Pulse meatball ingredients (minus breadcrumbs and egg) in food processor

  3. Manually add in bread crumbs and egg, mixing gently

  4. Roll into ball shapes

  5. Bake for 20 minutes in cast iron pan, turning halfway through cooking


Sauce:

  • Blend ingredients using a whisk or immersion blender


Serve with rice pilaf!
